Bland and buttery is another category of cheese which serves as an all purpose table cheese. It is widely used in burger and sandwiches due to its slice like shape. This range includes the Samsoe group, Edam, Gouda, Bel Paese and Fontina. This type of cheese is usually firm and supple and is easily sliceable. Then comes the Swiss style cheese which includes Emmentaler, Appenzell, Gruyere, Royalp, Sbrinz and Raclette. This type of cheese usually has a tough outer ring and interior dotted with holes. These holes are created due to the presence of air in the cheese. When heated this air releases therefore creating holes in the cheese. Other variety of cheese includes cheddar style cheese which is also commonly used in a lot of cooking items,  extra hard cheese, monastery cheese, blue veins, camembert and brie type cheese, goat’s milk cheese that are different in taste from cow’s milk cheese. Ewe’s milk cheese made from sheep’s milk, spiced and flavored cheese, smoked cheese, whey cheese, strong smelling cheese and processed cheese.

All these different types of cheese have different nutritional values. Cheese contains proteins and many amino acids that are very useful for the body. It also contains essential vitamins like vitamin A, B2, B12 and D. In addition to vitamins cheese is also a source of calcium, zinc and phosphorus.  Cheese is also a very good option for those who do not want to drink milk. They can get the nutrition of milk through use of cheese. However there are some bad nutritional facts about cheese as well. Cheese contains high levels of tryptophan that can trigger headache in some individuals. Cheese usually has a high calorie count and might not be a good idea for those who want to go on a diet. Due to high content of fat in it some say that alternate sources of proteins like fish, chicken meat are healthier to eat. However cheese is an all time favorite of many and is used in a variety of ways.
